{Original post updated from 2017.}

I have such a love hate relationship with pancakes. I mean, I love them because….PANCAKES! But ugh, they’re sort of a pain, no? With the waiting, and flipping, and having to make them in batches. Or you keep them in the oven to stay warm, but then they’re not really fresh. And everyone eats in shifts. Blerg.

You guys. Sheet Pan Pancakes for the win! We’ve been enjoying these for a few years now before they started showing up everywhere. It’s one of my favorite creations of all time. Same great flavor and texture, but so much easier. And quick enough you could make them on a weekday morning. Plus, the family gets to eat at the same time and they’re customizable so everyone is happy! HUZZAH.

Here’s what you’ll need to make our version:
(Scroll below to the printable recipe card for details and measurements.)

  • All-purpose flour: Make sure it’s spooned and leveled and not scooped to prevent excess flour, which will result in dry pancakes.
  • Brown sugar and Granulated sugar: For sweetness.
  • Baking powder: For lift.
  • Kosher salt: So the taste isn’t flat.
  • Largeeggs: These help bind the batter together.
  • Whole milk: This adds necessary moisture so the pancakes are fluffy.
  • Unsalted butter: For richness and moisture.
  • Vanilla: A little for added flavor.
  • Toppings: We divide our batter into 4 sections which include jam, berries, chocolate chips, and a mix of brown sugar/cinnamon and butter.

Pancake Recipe Variations

  • Try different fruits: A total of 1 cup berries can be mixed into the batter, if preferred. Blueberries, raspberries, strawberries, and blackberries all work well here, or a combination.
  • Fresh or frozen berries? I prefer fresh berries because the cooking time is so short. But frozen berries can be used, as long as they’re small. Otherwise they might not have time to properly thaw and fully cook the batter surrounding them.
  • Mix some nuts into the batter like walnuts or pecans.
  • Can I use pancake mix? I haven’t tested this recipe using pancake mix because the from-scratch batter in this recipe is so incredibly easy, but I can’t see why it wouldn’t work.

FAQs

What are 3 things that are discouraged when making pancakes? ›

10 Common Mistakes You Should Avoid If You Want Perfect Pancakes
  • You're overmixing the batter. ...
  • You ignore the heat during cooking. ...
  • You're using the inappropriate utensils. ...
  • You've been using the wrong pan. ...
  • You're cooking too many pancakes at once. ...
  • You flip your pancakes too soon. ...
  • You don't use salt or sugar.

What makes pancakes fluffy and helps them rise? ›

Here's why. Pancakes and waffles typically both contain baking soda, which causes them to rise. As soon as the baking soda is combined with the wet ingredients (which contain an acidic ingredient, like often buttermilk), it starts producing carbon dioxide gas bubbles that cause the batter to rise.

How to make pancake batter thicker? ›

Flour is your friend

To fix runny batter, just use a sifter to add in flour by the teaspoon. While flour will help thicken the batter, adding too much will result in something akin to elastic dough, which does not make for especially great pancakes.

What ingredient keeps pancakes from falling apart? ›

I can barely flip a pancake without it falling apart on me.

Your batter could be too loose—add a little flour.

Which is better for pancakes, baking soda or baking powder? ›

Adding baking powder is the easiest way to make fluffy pancakes. There's more than one way to make the bubbles that make a pancake fluffy, but the easiest way is by adding a raising agent such as baking powder.

Can I use mayo instead of eggs in pancakes? ›

Egg Substitutes for Baking and Pancakes

For denser cakes with strong flavors: Use mayonnaise, which adds moisture, richness, and a little bit of leavening power.

What ingredient in a basic made from scratch pancake batter makes pancakes fluffy? ›

Flour: This homemade pancake recipe starts with all-purpose flour. Baking powder: Baking powder, a leavener, is the secret to fluffy pancakes.

Does adding more baking powder make pancakes fluffier? ›

Baking powder (double acting) provides two rises: The first occurs when the baking powder comes into contact with a liquid, the second when it's exposed to heat. Too much baking powder will create a very puffy pancake with a chalky taste, while too little will make it flat and limp.

What does adding an extra egg to pancake mix do? ›

Eggs also give the batter additional, richer flavor from the yolk fat. If you add too many eggs, you'll have “pancakes” that look more like custard or crepes. When you don't add enough eggs, the cakes will be drier and tougher.

Can you over mix pancake batter? ›

Just don't make the most common pancake mistake — over-mixing your pancake batter! Perfectly fluffy pancakes take just a few turns of the wrist. Over-mixing is an ambitious baker's enemy. Too much stirring can turn what would otherwise be lofty, tender pancakes into tough, flat disappointments.

How long should you cook pancakes? ›

Keeping the skillet at medium heat, ladle about 1/4 cup of the batter onto the skillet, to make a pancake. Make 1 or 2 more pancakes, taking care to keep them evenly spaced apart. Cook, until bubbles break the surface of the pancakes, and the undersides are golden brown, about 2 minutes.

What makes pancakes unhealthy? ›

Disadvantages. Typical pancakes are made with white flour, which is low in fiber and, thus, less filling. Pancakes are also not particularly high in protein—another food component that helps you feel fuller longer.

Why should you avoid over mixing your pancakes? ›

Overmixing pancake batter can cause your flapjacks to deflate, for two main reasons. The stirring or whisking motion may cause the batter's air bubbles to pop, and can also cause too much gluten to develop. Air and small amounts of gluten are both essential in developing the ideal pancake texture.

What causes pancakes to break? ›

Either your recipe is faulty or you are flipping too early. Rule of thumb: Wait until the bubbles in the middle of the pancake take a bit to close from the uncooked batter on top. You shouldn't have batter that can easily drip when you flip, but not completely dry.

Why do my pancakes fail? ›

You may have undercooked them or not used enough fat to cook them properly. Alternatively, the batter may be of the correct consistency but you may have used too much of it for each pancake. Batter which is too thick can also make the pancake difficult to roll or fold.
