I had grape tomatoes that needed to be used so I roasted them while roasting the garlic at 400F for 40 minutes. I used a cup of the roasted tomatoes instead of the fresh tomatoe and increased the spinach to a cup as well and it turned out really great, I served it with a cod main dish and our guests loved this quinoa too.

I would give it 4 stars but my husband was not a fan at all. I think some people just don't like Quinoa and I'm married to one of them. I doubled it. A bit time consuming with the roasted garlic on a weeknight but yum. I wonder what feta would be like instead of the parmesan. I will make this again for me to have for lunches. Would be a nice dish for a potluck.

We're just getting on the quinoa bandwagon and glad we did! This is excellent. I doubled the recipe and look forward to the next couple meals with what's left. It could stand alone as a meatless meal, too. I followed the measurements and ingredients nearly to the letter. Wouldn't change a thing! Can't wait to try other quinoa recipes. Thanks, CL, for your features on this important ingredient.

Super good. I used reduced sodium chicken broth. I would not add that 1/4 tsp salt next time (i prefer dishes less salty.) I would also add a bit more spinach leaves. Other than those issues, I thought it was great. Oh, and I LOVE garlic so the amount this recipe calls for is perfect. And, you MUST ROAST IT. Roasted garlic makes everything better. Thanks!

This was AWESOME!!! Did double spinach & tomatoes. Like others will double next time. So much flavor!! It is spicy with 1/4t crushed pepper, which we like, but if you don't like lot of spice use 1/8 t.

this is one of my favorites. i don't roast the garlic (i use dorot's frozen minced garlic from trader joe's which tastes like fresh) and saute with the shallots. the recipe still tastes great. i always add more tomato (sometimes i'll roast grape tomatoes to intensify the flavor) and spinach. a dash of cayenne (instead of flakes) gives it a great little kick.

I've had quinoa in the past. I used to shy away from the stuff at various events. The quinoa was ALWAYS bland. This recipe turned out flavorful; the garlic didn't take over the dish. I read the other reviews posted prior to making it for the first time. I doubled the spinach and shallots, and, omitted Parmesan cheese - I was more than happy with the result. As a spicy food lover, I thought the crushed red pepper wouldn't be enough. It was perfect.

Good recipe. Enjoyed by all including 9yr old grandson. I was pressed for time so I did not roast the garlic but rather sauteed several finely chopped cloves along with the shallot. Grandson had 2nds and 3rds until it was gone.

This was delicious! My first ever Keen-wah dish. 1/2 cup of spinach was plenty and be sure to cook the quinoa until you get the texture you like (I liked mine well done with a little crunch to it). This recipe will serve two as a side dish. I baked one chicken breast with rib meat to round it out as a meal for two.

Great Recipe! Easy to make and really delicious. I had vegan friends over for dinner I changed the chicken broth to veggie and opted out the parm. I cant wait to try it with the parm.

My all-time favorite quinoa recipe. I use whatever kind of tomatoes I have and I use lots of spinach. The roasted garlic is a must. I buy several heads and roast them up so I always have some on hand so I can make this at the drop of a hat.

This recipe is delicious and one of the best things I have prepared in a long time. I served it with baked chicken breast. I forgot the cheese and I think I may like it better without the cheese. I cannot wait to bring this to Dinner Club and share with family.

Excellent recipe! I doubled the spinach and tomato, as per some other reviewers, and I used red onion instead of shallots. Next time I think I will double this recipe so that I have more leftovers.

My first time using quinoa, it turned out GREAT!!! I doubled the recipe like some other reviews said. I served it with the same wine I cooked it with and it echoed the flavor perfectly. Couldn't wait to get home and eat the leftovers.

This is a great recipe. I will add to my box of favorites for sure. Mine came out a little damper than preferred but some slight adjustments next time will yield a 10 vs the 9.9 this go round. Wonderful recipe!

I was a little leery about trying this recipe, what with all the different ingredients; I wasn't sure the flavors would meld together. Am I glad I tried it! Followed the recipe to the letter and it came out perfect. We especially liked all the fresh ingredients added at the end.

One of my favorite quinoa recipes! This is so easy and you can expand it and serve as a main dish by adding chopped, cooked meat or more leafy greens and additional vegetables. Delicious. . .

Delicious! I didn't add the garlic, since I'm not a fan, but this was still full of flavor! Definitely didn't have 4 servings, though; it was more like 2 servings at 3/4 cup.

I wanted to make this so badly but didn't have all the ingredients, so I changed what I put in it. What I will say is that the wine makes it. I have been making quinoa for a long time and always cook it in chicken broth. I was interested in trying the preparation method here. I sauted some garlic in oil and added the quinoa and then the white wine. Then continued with the broth. It was ten times tastier than just with the broth. Like I said, I didn't have the ingredients so while the quinoa was cooking, I added parsley and then when there was 5 minutes left to go I added black beans. Once done I added cut up grape tomatoes. It was DELICIOUS. I also added a little parmesan but couldn't decide if I liked it better with or without the cheese.

This was a big hit with my husband. I did not have time to roast the garlic (I just threw approx. 1 clove of minced garlic in with the shallots) but will do it the next time. Served it with roasted tilapia - great dinner.

Fantastic healthy recipe! It tasted fresh and light and you know quinoa is packed with goodness so you're getting a healthy meal. I paired this with Crab Cakes with Spicy Rémoulade also from CL and it was off the charts!

Love this! Made a couple of small subs: didn't have shallots, so used minced garlic (in addition to the roasted), and used white zinfandel for the dry white wine. Also increased the amount of tomatoes and spinach. Left us wanting more; next time I'll double the recipe. Went well along side some baked chicken leg quarters.

I cut the garlic head in half as instructed and it was still way too garlicy, and I normally love garlic. Other than that, this was a great healthy side dish.

I have made Quinoa many ways, and this by far is my favorite! I always use a whole bag of fresh spinach, and do NOT skip the roasted garlic. Using the jarred will not give it the same effect. I also use Campari tomatoes instead of grape (they tend to have a better flavor) and Fontina cheese. Enjoy!

This is a nice alternative to rice and would probably work well with chicken or fish I made it as a quick main dish for my husband as an alternative to pasta. Quinoa (KEEN-Wah) can be pretty boring but this recipe dresses it up nicely. The recipe didn't make much--I would definitley double it next time. The garlic is mild and worth the hour-long wait. I used quartered grape tomatoes--it gave the dish a nice color and consistent look. I would probably try serving this as a cold side salad, too.
